Homemade peppercorn sauce: 3 minutes, in the pan you cooked the steak in

Steakhouse peppercorn sauce doesn't come from a packet. It's made in the pan the meat just cooked in, with what's stuck to the bottom, while the meat rests. Three minutes, six ingredients, and only one pan to wash.

Ingredients, for two

  • 1 shallot, finely chopped
  • 1 tbsp coarsely crushed black pepper
  • 3 tbsp brandy (optional)
  • 100 ml beef stock
  • 80 ml heavy cream
  • 10 g butter

Before the sauce: the meat

Everything starts with the fond, the brown layer stuck to the bottom after searing. No fond, no sauce. So you need a properly seared piece of meat, in a pan that got hot enough to build one: the full method is here — searing a steak at home.

Take the meat out, put it on a plate, and whatever you do, don't wash the pan.

The sauce, in 4 steps

  1. Medium heat, shallot and pepper in the leftover fat, 30 seconds. The shallot should turn translucent, not brown.
  2. Pan off the heat, pour in the brandy, then back on the heat and let it cook off for 20 seconds.
  3. Add the stock and scrape the bottom with a wooden spoon: the fond lifts and goes into the sauce. Reduce by half.
  4. Add the cream and let it thicken for 1 minute. Off the heat: the butter, then the juices the meat left on the plate. Taste, and only salt now.

Pour over the sliced meat. Done.

The four details that make the difference

Crushed pepper, not ground. Crush the peppercorns with the bottom of a saucepan instead of a grinder: big shards give the steakhouse flavour, fine grinding gives a grey, harsh sauce.

Alcohol always off the heat. On a very hot pan, strong alcohol can catch fire. Pan off, pour, pan back on. The brandy is optional: without it the sauce is milder, but it works.

Full-fat cream. Light cream doesn't handle boiling well: it tends to split and won't coat the spoon.

The resting juices. The liquid the meat leaves on the plate is still flavour. It goes into the sauce, not down the sink.

If it goes wrong

It's too runny. The stock didn't reduce enough. Back on medium heat for another thirty seconds before the butter goes in.

It splits, with beads of fat on top. The heat was too high after the cream. Off the heat, a spoon of hot water and whisk: most of the time it comes back together.

It's bitter. The fond burnt instead of browning, or the pepper blackened. On a black base, better to wash the pan and skip the sauce this time — the difference between browned and burnt.

What it goes with

Ribeye, fillet, flank, a thick burger patty. It also works with a pork chop, swapping the beef stock for chicken stock. For other meats and fish: which sauce with which meat.

And the other nine

Peppercorn sauce follows the same method as every pan sauce: aromatics, deglazing, finishing off the heat. Shallot and red wine, wholegrain mustard, lemon and caper, quick beurre blanc, gorgonzola… all ten, with quantities and the “which sauce with what” chart, are in the 10 pan sauces in 3 minutes booklet.
