Why this product
Laid flat on the pan, the screen stops grease spatter when you sear a steak, a duck breast or bacon, and lets steam escape through the mesh. Unlike a lid, it does not turn pan-frying into steaming: the crust stays crisp.
Fine stainless steel mesh stretched in a steel wire rim, with a 16.5 cm handle to pick it up without burning yourself and to hang it up. 25 cm for our 22 and 24 cm pans, 29 cm for the 28 cm, 33 cm for a wok.
Why steam stops a crust from forming: searing a rib-eye at home.

FAQ
Which size for my pan?
Slightly larger than the pan: 25 cm for a 22 or 24 cm pan, 29 cm for a 28 cm, 33 cm for a 32 cm wok.
Why not a lid?
A lid traps steam: the meat steams and the crust goes soft. The screen lets the steam out.
