Why this product
A Japanese santoku with a core of Aogami No.2, the Japanese "blue steel", clad between two layers of stainless steel. The carbon steel core, with a stated hardness of 62 to 64 HRC, takes a finer edge than stainless steel alone and keeps it for longer.
The 18.4 cm blade is sharpened to 15° on each side. The octagonal handle combines maple and white buffalo horn. The knife weighs only 139 g and comes in a wooden box. Like all carbon steel, the edge develops a patina over time: dry it after every use.

FAQ
What is Aogami steel?
