Why this product

A santoku that stands out on the board. Its sides are made of 53 layers of brass, red copper and 316L stainless steel forged together: the pattern shows gold, copper and silver tones. The edge itself is formed by a 12Cr18MoV steel core, with a stated hardness of 60 ± 2 HRC.

The 18.2 cm blade cuts vegetables, meat and fish with a forward push. The padauk burl handle, with a cupronickel ferrule, balances a 175 g knife. It comes in a wooden box.

Copper and brass are alive: over time, and in contact with acidic food, they darken and develop a patina. This is normal.

FAQ

Will the colour change?

Yes, a little: copper and brass darken over time and in contact with acidic food. It is a normal patina; drying right after each use limits it.

What does the cutting?

The edge is formed by the 12Cr18MoV steel core. The copper and brass are part of the decorative layers on the sides.

What if it's not right for me?
