Why this product
The small knife you hold in your hand: peeling, hulling strawberries, coring a tomato, scoring, trimming. Its 9.2 cm blade works close to your fingers, where a big knife becomes clumsy.
The 14Cr14MoVNb powder steel core, with a stated hardness of 62 to 64 HRC, is clad in two sets of 36 Damascus stainless layers. The olive wood handle with its copper rivet matches our Chinese cleaver: the two make a pair.

FAQ
Why a paring knife as well as a big knife?
For everything done in the hand rather than on the board: peeling, trimming, coring. A big knife is clumsy there.
Can it cut bones?
No. Its very hard blade is made for precision; a bone would chip it.
What if it's not right for me?
You have 60 days to send it back. The conditions are on our Shipping & returns page.
