Why this product
The hardest knife in the shop, and the stones it deserves. The XINZUO Zhen series santoku has a ZDP-189 steel core hardened to 65 to 67 HRC (per the manufacturer): it holds its edge for a very long time, but takes patience to sharpen, on fine stones. The glass-backed whetstone set, in 1000 and 5000 grit, is made for exactly that: the abrasive sits on a tempered glass plate that stays flat.
The santoku comes in its paulownia wood box, with its sheath. Bought separately: CHF 748 (santoku 569, stones 179), or CHF 673.20 with our 10% discount on two or more knives or sharpening items. As a set: CHF 649. They may arrive in two parcels, each with its own tracking number.

FAQ
Why glass-backed stones?
Steel at 65 HRC needs fine, very flat stones. The tempered glass keeps the stone flat right to the end.
Is this knife fragile?
Very hard, so less flexible: no bones, no frozen food, no twisting, and a wooden board. In return, it stays sharp far longer.
What if the set is not right for me?
You have 60 days: the items must be unused, complete and in their packaging. The conditions are on our Shipping & returns page.
