Why this product

The bunka, the Japanese chef's knife with a sloped, angled tip, in a compact size: a 14.8 cm blade, 4 cm wide, that does the work of a large knife on a small board. Slicing an onion, chopping herbs, cutting a tomato or a chicken breast; the angled tip handles the fine cuts.

Two versions, same shape and size. German 1.4116 steel with an olive wood handle: a sturdy knife that is easy to look after. 67-layer Damascus around a 10Cr15CoMoV core with a figured sycamore handle: harder (60 HRC stated), it holds its edge longer. Both are sharpened to 15° per side and come in a XINZUO gift box.

Bunka, santoku or nakiri: our guide to Japanese knives. Larger: our 21 cm Damascus bunka.

Hand wash, then dry immediately: no dishwasher.
Cut on a wooden or plastic board, never on glass or stone.
Sharpen on a whetstone; a pass on the honing rod between sharpenings keeps the edge.

FAQ

Which version should I choose?

German steel is softer: it forgives knocks and is easy to resharpen. Damascus is harder: it cuts finer and for longer, but needs a little more care.

Bunka or chef's knife?

The bunka has a straighter blade that cuts with a forward push, and a bevelled tip for fine cuts. This 15 cm size suits small boards and smaller hands.
